If you are afraid it is not sufficiently original, in addition to the evolution of your potential for a relationship, then select a public space with lots of people everywhere, but still able to share intimate conversations.
A coffee date is good is that it can quickly be over. Do not be afraid to schedule interesting topics early either, you do not want to script your date, but you want to relieve pressure and avoid awkward lulls in conversation. You can spend 30 to 40 minutes in a cafe, getting to know each other.
If the date sucks, finish your drink and say goodbye. If it is interesting, or you feel like it has the potential to go somewhere good, propose different activities. Walking out of the cafe together, will bring you closer and learn more about each other.
Start with a walk as it is a beautiful day, and perhaps lead to something more physical like ten pin bowling or miniature golf. At this point, even the dinner would be correct if you are enjoying her company.
